Crock Pot Tortilla Soup Recipe

This is a repost of one of my favorite crockpot soup recipes. Hope you enjoy the new photos. It is time to find some comfort and warmth in a soup. I love my crockpot when it comes to making soups and chilies as you can just dump and not think about it!
 
 For a recent luncheon I was having, casual the way I like it, I decided to try Tortilla Soup and Ham biscuits.   I knew I was going to have a hectic morning so I threw everything into the crockpot in the evening and just plugged it in when I woke up.
 
Ironically my friends arrived before me, a little email slip on my part!! Needless to say the soup was there waiting for them!! ( I had also put all the condiments in a dish in the fridge so it was easily accessible)
 
 

 
I adapted the recipe for Tortilla Soup from A Year of Slow Cooking.   The one thing I did not like about this recipe is that the chicken had to be cooked.
 

 

Can I make this slow cooker Tortilla Soup Ahead of Time?

 
The night before when I had the grill on for dinner I just grilled up some chicken breasts along with what we were having.
 
 
I guess this saved me time from having to pull apart the chicken before the guests arrived which would have been disastrous considering my email mishap:)  It is also a great recipe to use frozen cooked chicken.
 
 
 

WHAT TIME OF CHICKEN SHOULD I USED FOR TORTILLA SOUP?

 
The Chicken needs to be cooked for this crockpot soup recipe One of my favorite food planning tips is if you are making chicken for a recipe, put a few extra breasts in the oven with just salt and pepper.
 
When it is finished cooking, chop it or shred and place it in a freezer bag. You will have some great chicken waiting for you in the freezer.

This repost is the 2nd time making this soup and thought it was pretty good but especially easy.

CrockPot Tortilla Soup

Yield: 6 - 8 Servings
Prep Time: 15 minutes
Cook Time: 6 hours
Total Time: 6 hours 15 minutes

Crock Pot Tortilla Soup is a comfort food that is made while you are at work or busy in the day

Ingredients

  • 3 cups of chicken broth
  • 1 1/2 cups cooked chicken
  • 1/2 onion
  • 1 cup frozen roasted corn, I only could find regular corn
  • 2-3 green onions
  • 28 oz can of tomatoes and juice
  • 1 cup chopped up vegetables that you have on hand, celery and carrots in my fridge
  • 4 cloves of garlic
  • 1/4 t crushed red pepper flakes
  • 1/2 t cayenne pepper
  • 1 t cumin
  • salt to taste
  • 1 can of black beans--I used organic tri-blend

optional garnish

  • --tortilla chips
  • --Shredded Taco Blend or cheddar Cheese
  • --sour cream
  • --green onions
  • --cilantro

Instructions

  1. Dice all veggies--dump everything into the crock pot
  2. Items can be frozen if you have leftover cooked chicken etc in freezer.
  3. Cook on low for 8-10 hours, or high for 6 or so.
  4. Before serving, garnish as you choose.
