When it comes to 4th of July recipes, watermelon is often the center for my family. It is just a classic summer fruit, but most don’t think about putting it into a salad like this.

Combining the super sweet watermelon with some blueberries, jicama, and of course, our feta cheese makes it more than a dessert.

It becomes not just a dessert, but also a side dish.

DO I NEED TO USE JICAMA?

If you never had Jicama before, you may have to ask someone in the produce department to help you select one. After purchasing mine, I  found out that the smaller the fruit the more sweet.

WHAT IS JICAMA

Jicama is a nutrient-dense food that is low in calories and high in fiber and water.

Jicama, like other root vegetables, is a relatively high-fiber and low-carb vegetable

The reason we add Jicama to this recipe is to add a bit of crunch in an otherwise soft recipe. It combines great flavor and texture to really give you a great 4th of July recipes choice!

The second time we made this we did not use jicama and it just did not have that extra crunch but still delicious.

It is super easy to assemble this red, white, and blue fruit salad. I cut my watermelon ahead of time using the tips I share in our post about how to cut a watermelon.

I find that storing in a watermelon bowl keeps it fresh longer. For the fruit salad, you will want to cut your watermelon into smaller pieces. Cubes work best.

Make the vinaigrette, in a separate measuring cup and pour over the fruit and jicama. Mix everything together and pour into your favorite serving dish. I love using a pretty serving bowl with a lid so I can take this directly from the refrigerator to the table.

DOES FETA GO WITH WATERMELON?

Add the feta and fresh mint, a must, do not try to use dried mint in this recipe. Allow it to sit in the fridge for at least 30-60 minutes, the longer the better. Stir it before serving as a lot of the juices seemed to collect on the bottom of the serving dish.
