Amazing Chocolate Pomegranate Coconut Bites Recipe

Back in the Fall I had the privilege of watching how the historic chocolate of the colonial days was made at a preview of American Heritage Chocolate. You can see more info about that food blogger event on this post. I was provided some samples of American Heritage chocolate to facilitate this post on no bake  and easy chocolate desserts. But the opinions expressed are 100% my own. I love this time of year because I have many excuses for making sweet treats for events and just to give to neighbors and friends. Provided this task with chocolate seemed like the perfect assignment for us at Close to Home.

Feeling very seasonal and after a recent  conversation I had with my mother about a pmepgrante chocolate bark her hair dresser had made, started my wheels turning. I decided to turn bark into these amazing pomegranate chocolate bites, with an optional sprinkling of coconut. American Heritage is not like your traditional semi sweet chocolate it has flavors that are “secret”as a sprinkling of spices such as cinnamon, nutmeg, vanilla, orange, and red pepper. I thought orange and pomegranate would be a great flavor compliment.

Even better this is a simple chocolate recipe that is ready to eat in about 45 minutes start to finish. I used the American Heritage Chocolate Bar for this chocolate pomegranate Bite Recipe  but you could use the sticks or bites as well.

Check out this bar, it does not look like the stuff you find on your grocers aisle. To make the melting process quicker, I cut up the the chocolate finely.

Using a double boiler, ( I just use a glass bowl over a sauce pan) melt the chocolate slowly. Do not walk away to change the laundry or answer the door this chocolate is too precious to burn.

Fill a mini muffin pan with small cupcake liners. ( I happened to have some holiday ones)

  • Once the chocolate is melted and smooth add a small amount of the melted chocolate into 12 muffins cups. (just cover the bottoms completely)
  • Spoon pomegranate seeds to fill the rest of the cups. ( Feeling a little lazy, I purchased seeds, not the entire pomegranate)  One 7 oz cup was more than enough for 12 bites. If you plan on making more than 12 chocolate pomegranate bite , which you will wish you had, save money and seed the pomegranate yourself.
  • Cover the pomegranate seeds with the remaining chocolate, don’t worry if you don’t full cover the seeds, I think it is pretty with a few seeds showing.
  • I sprinkled a little sweetened coconut on top of each cup. ( I think it makes it even more festive and does add a flavor element)

Place in your fridge for about 30 minutes or until hardened.

These are best eaten in a day or two. I placed the ones we did not eat the first day in the fridge and thought they taste better at room temp.

Everyone loved them. My husband asked if there was a licquer in the chocolate. It just has a such a rich and complex flavor it really is a super treat and I guarantee your friends will eat them up.

Chocolate Pomegranate Bites Recipe

  • 6 oz American Heritage Chocolate block (or any dark chocolate)
  • 2/3 cup pomegranate seeds
  • 1/4 cup sweetened coconut
