I know it is not good to share the post I have published previously, but I had show this kitchen blooper. I am not sure what happened this time around as this is the second time I made this recipe and it was a total flop. Strawberries are plentiful in our house after the second picking trip so I thought I would try Ellen’s Great Aunt’s Strawberry Cake.
I let the cakes cool, although it was quite humid in the house. I also decided to try a new frosting product from Duncan Hines.
This is the first cake I made last year:

Starting to frost it, so far so good:

After it I put the cake in the fridge to harden up the frosting:
As my children say, it may not look good but it tastes good. Fortunately I was just making it for the family not to bring to an event or serve company so it was not as frustrating as that scenario.
What do you think might have happened?
Here is the recipe again:
1 box white cake mix
3/4 c Wesson oil
1/2 c water
1 small package strawberry jello
4 eggs
1 1/2 c mashed strawberries
Blend jello & cake mix. Add oil and water then eggs, one at a time. Add 1 cup of strawberries last. Pour into 2 9 inch round baking pans Bake at 350 for 25 min. Allow to cool completely on racks before frosting.
Frosting:
cream one stick butter and add i box of confectioner’s sugar, alternating sugar w/ 1/2 cup mashed strawberry’s.
I have never made the frosting, tastes better to me out of the can. You can still add the berry’s to pre-made frosting and garnish with strawberry’s on top.
It’s so moist and yummy!

My husband loves strawberries.I will try this recipe for him.
It could be the extra strawberries and how well they were mashed. The cake probably wasn’t able to”bond” to itself enough if there were too many strawberries
Maria-just my opinion-do you think the ingredients were too heavy
for the round 9 inch pans. Maybe a 9 by 13 would distribute the
the weight of the ingredients more evenly.
I don’t know what happened. I’m far from Betty Crocker. It sounds good though and I wouldn’t be surprised if mine did that too
