I love the base of hash browns and eggs in this sausage breakfast casserole. You can even make it healthier by substituting turkey sausage if you prefer! I’ve even seen this made with only egg whites, egg substitute, or even low-fat cheeses!

We chose the less fat turkey and pork Johnsonville breakfast sausages for this recipe but any flavored sausages your family enjoys will work out great.

The hardest part of this recipe is simply cooking the sausages. The directions on my Johnsonville Sausages was to bake them in the oven. This is a genius idea in my opinion. A much cleaner and quicker way then messing up a skillet.
 
Use a piece of foil underneath and clean up is even easier. Or, if you prefer being eco-friendly, you can grab some silicone baking mats. They clean up super easily and are reusable.

Next, you mix all of the ingredients together in a large bowl before pouring into your greased casserole dish. I love my Pyrex dishes, but you can use any larger casserole or baking dish for this recipe.

You just want to make sure you spray with a non-stick cooking spray or coat with butter before pouring your mixture into the bowl. Otherwise you might have some stuck on food, and that’s no fun to clean up!

This is a thick casserole and make sure you have it sit out 30 minutes while your oven preheats. Especially if you are using a glass dish. Never put a cold dish into a hot oven. Shattering happens easily, so be careful!

Since my kids don’t like peppers or onions, I left them out of this sausage breakfast casserole recipe. Instead, I added salsa to mine and my husband used hot sauce on his. I believe there would be a much better flavor with the added vegetables.

Sausage, potato and Egg Breakfast Casserole

Yield: 8 - 10 Servings

Cook Time: 20 minutes
Total Time: 35 minutes

A great make ahead breakfast casserole for any brunch especially Mother's day Sausage, potato and Egg Breakfast Casserole

Ingredients

  • 2 12 ounce packages Breakfast Sausage
  • 1 30 ounce package Frozen Hash browns
  • 2 Cups Shredded Cheese, Mexican blend or Cheddar
  • 1/2 Cup Red Pepper, diced
  • 1/2 Cup Green Onions, Sliced
  • 2 Cups Salsa
  • 9 Large Eggs
  • 3 Cups Milk
  • 1 1/2 teaspoon Ground Mustard
  • 1 teaspoon Salt
  • 1/2 Teaspoon Black Pepper, more to taste

Instructions

  1. Place sausage on a 15-inch x 10-inch x 1-inch baking pan lined with foil or silicone baking mat
  2. Bake at 375˚F for 15 to 20 minutes or until sausage is no longer pink. Turn once mid-way through cook time to make sure both sides are browned. Drain and slice into 1/4-inch pieces.
  3. In a large bowl, combine the eggs, milk, mustard, salt, and pepper.
  4. Add the hash browns, sausage, cheese, peppers, onions, and mix well with the egg mixture.
  5. Pour into a greased 13-inch x 9-inch x 2-inch baking or casserole dish
  6. Cover and refrigerate overnight if prepping ahead. Remove from the refrigerator 30 minutes before baking
  7. Bake, uncovered, at 350˚F for 1 hour to 1 hour 15 minutes or until set and golden brown and an internal temperature of 165˚F is reached. Cook time will vary depending on the size of the casserole dish, as well as the oven. The main thing to consider is the internal temperature.
  8. Let stand 10 minutes before serving.
  9. Serve with salsa or hot sauce if desired.
