Thin Mint Truffles …. ST. PATRICK’S DAY DESSERT

My husband is Irish, and that is the one holiday I often skip over. I started feeling a little guilty I have not doing more for St. Pat’s Day. I thought I would recreate a St. Patrick’s Day Dessert I made 3 years ago. Back then, I could not resist the Thin Mint Truffles by Confessions of a cookbook gal.

I had a girl scout in the house when I made these originally, I had a good supply! These were super easy to make and incredibly delicious to eat.

These are so much easier than a cake pops.  This time I did not have any Thin Mints and found some store brand ones at Food Lion. I have also heard Keebler makes a Grasshopper one that works great too.

What kind of Mint Cookies Should I use for Mint Truffles?

 
The store-brand cookies were not chocolate on the inside the result was a little different but it tasted great. Last time I made these, I adapted the recipe slightly by covering some of the balls with some mint chocolate chips we had on hand and some with melted white chocolate discs.

This time I simply used white chocolate discs and coated them with green chocolate discs.

Do I have to bake these truffles?

 
The best part of this recipe is that you don’t need an oven and the hardest part is done in a food processor. If you like Oreo Balls then we are talking the same language. 
 
I used a small ice cream scoop to make perfect sized balls, I just love this tool.

What should I coat my no bake truffles with?

 

Coat them with white, dark chocolate or even green candy melts.  The choice is up to you!

 
Like I said I just coated them in white chocolate this time. 
 
 

 

Be careful you probably can’t eat just one of these decadent thin mint truffles. !!

 Last time I made these I placed the cupcake filled with truffles in a bag and you have the perfect gift or party favor.

 
This time I think I will just enjoy them in tiny cupcake holders…

Thin Mint Truffles

Thin Mint Truffles

Yield: 10 - 15 Truffles
Prep Time: 10 minutes
Additional Time: 30 minutes
Total Time: 40 minutes

Thin Mint Truffles are a decadent treat made from your favorite Girl Scout Cookies.  Perfectly dressed for St. Patrick's Day too

Ingredients

  • 9 oz box Thin Mint Cookies
  • 4 oz cream cheese, softened (Low fat fine)
  • White chocolate, white chocolate discs, mint chocolate chips (need to add a tsp of shortening if using real chocolate) or Dark chocolate almond bark or dark chocolate candy melts
  • Nonpareils

Instructions

  1. Crush the Thin Mints very finely. You can do this by placing them in a large Ziploc bag and rolling them with a rolling pin, or use your food processor, which is what I did.
  2. Once they are crushed, pour them in a large bowl and add the cream cheese or add the cream cheese to the food processor and pulse until incorporated.
  3. Use a small ice cream scoop, or roll into 1 inch balls, place on a wax paper lined baking sheet, and refrigerate for about 30 minutes.
  4. Melt almond bark or candy melts and using a toothpick, dip truffles completely and twirl to allow the excess to drip off. Place back on lined baking sheet and sprinkle with nonpareils before set. Refrigerate until firm
  5. . You can melt some green chocolate in a Ziploc bag, cut of the tip and use as added decoration

  1. These look really yummy! I bet they would be good with plain dark or white chocolate too. And that’s a clever idea with the ziploc as a decorating bag.

    BTW, if anyone doesn’t have access to girl scout cookies, the Keebler Grasshoppers taste exactly the same. And even the Walmart Great Value mint cookies taste (and look) just the same.

  3. I usually crave them for a few cookies then put them in the freezer…not any longer:)

  4. the truffles are a little pricey when you figure in the 3.75 box of cookies. but it is for a good cause
