Watermelon Rice Krispies Treats For Summer Parties

Want to get your kids to eat their fruit? How about serving fruit for dessert? Well OK, this is not really fruit but maybe it will take baby steps. At your next BBQ be sure and bring some Watermelon Rice Krispies Treats for the kids. I made these for my son’s final school picnic and he said the kids really enjoyed them. To me this was a fun and new way to make traditional Rice Krispies Treats. Serve so real watermelon along side and be sure to check out our tutorial of how to cut a watermelon.

I love to bring rice krispie treats to parties because for the most part they are allergen-free, they are no bake and most kids love them. However, I wanted to change things up for my son’s class, and what better than to turn regular rice krispies into watermelon shapes. I think I had as much fun as the kids had eating them.

I made a double recipe just to make the dyeing of the marshmallow mixture that much easier, we all know how sticky that can get.

In these pictures I made the red interior part first but now I think it would be easier to make the “rind” first and then fill it in with the red. I used food coloring and added it to the melted marshmallow before adding the cereal. You cold probably also use Kool-Aid packets.

Allow the red rice krispies mixture to cool slightly before adding mini chocolate chips or the seeds. If not the chips will just melt.

Allow to cool completely before cutting them. I made 30 slices so they were pretty thin, I wanted everyone in his class to be able to try one if they wished. You can cut them any size obviously. This is not true to size for 15 servings:)
